Ok, off and running with some beef plate (dino) ribs.

Hickory wood and Kingsford charcoal. 18" Weber Smokey Mountain Smoker and a fire dial diffuser plate.

Nice, looking good so far! In for the finish for sure! Just did some myself and I'm sure you will love them! Did you remove the membrane?

I left the membrane on mine, Curious what the difference would be.
 
Pulled from the smoker @ 7 hrs 41 mins with an IT of about 186° F.

I laid the dino ribs on peach paper and smeared the top with some beef tallow, wrapped it up and put in the oven @ 225° F to finish up.

The smoker coals were dwindling and I didn't want to add more coals. The bark has been well established and the hickory flavor has penetrated the meat. The oven will finish the job.
