Finished the jerky process today
!/2 cup of Jack Black
1Tbs sugar
1/4 cup soy sauce
1/4 cup Teriyaki
1/4 cup worcestershire sauce
1 bottle beer
1Tb sp kosher salt
1/4 tsp red pepper
1Tbs course black pepper
sliced round roast approx 3/8 in and trimed fat
placed in plastic bag with above mix for 24 hrs
after rememoving from plastic bag patted dry
put on cure and sealed in plastic bag for 72 hrs
Got smoke going in the smoker and placed meat in upright rib box for six hrs
removed and sealed in vacuum bags
Heat in upright of smoker at 145 degrees
Wife will not stop eating it and the neighbor came back over for some
to take with him on a road trip tomorrow!!!!
