Beef Chuck Short Ribs

Seeing all the beef DINO ribs posted lately inspired me to redouble my efforts to find some locally. I go to a local butcher outlet occasionally and I have never seen them in their glass case. I figured I ought to ask! Glad I did! Otherwise I would still be looking! And at under $4 a lb.. what a great bargain at that!

These were rubbed with SPOG and Rosemary and into the kettle using the snake method with a couple chunks of Alder. Didn't wrap. Pulled wrapped and toweled at 200' and into a cooler till suppertime. Oh boy these were good!

Is that a little spattering of Kraft Mac-n-cheese on that plate BEV? Those ribs look fantastic BTW. Nicely done.

Ha! You guys are funny! It's not a boxed mix mac n cheese. But I did cheat. I keep a powdered cheese sauce mix around rather than starting with a flour roux. Then I add some fresh grated Tilimook cheese to that.
So its more of a 50/50. I do cheesy taters the same way sometimes. I spent the day doing yard work and keeping an eye on the smoker. I was pretty tired by dinnertime.

Those ribs look fantastic . Nice work . Did you put extra butter in the cheese powder ?

Oh theres plenty of butter... but I have learned to back off how much butter I add when adding real cheese too. Otherwise there will be pooling grease.

Fer-Sher! I was in heaven eating them, and I really enjoyed the cook. They were plenty juicy, and were real rich in flavor. But I don't think I will skip the braise phase next time. No complaints! Thanks for the Like.

Thank you. They really are an easy cook. I did trim a layer of silver skin off the top. That's what took the longest. The hardest part was the wait and smelling the smoker all day while out on the tractor.
