Beef Brisket for a Friend

I don’t do a lot of briskets but a friend has some family in town and asked me to smoke them a brisket. They picked up a flat when I wanted a packer so I had the mrs get me a packer. I want it to turn out well and I struggle to keep the flats from getting dry so I will keep the flat for myself.

I did a light trim and covered with oil and spog for seasoning. Wife found a prime at sams for a good price that was about 14#. Went in the weber summit about 10:15 tonight. Hope to get it settled in about 225 and head to bed.
Will post more photos in the morning.

Brave man, going to sleep with a brisket cooking has not worked out well for me.
 
I checked it at 230 when I woke up and the smoker was running just under 200 so I gave it a little air.
When I checked it at 6 it was running a tickle hotter than I wanted at 250 or so.
Looking good son far though.

Great question on the IT. My thermometer decided to puke this morning and I won’t be able to get a new one for a few hours when the hardware store in town opens. I did restock with some fuel. May have made it but since everything was off the racks and open I put more in and I wanted another piece of wood for the flat to get flavored.

I’m sure it’s fine but would like to know myself.
Just wrapped in butcher paper and gave him a friend. I’m using my rib wrap to get me some more space. We’ll see if that is a good idea or not. Figure the family and I can eat the flat tonight.
