Flat, that tri tip looks so good that it would have been almost impossible for me to grind them. Then again, those snack sticks look incredible as well. Nice work, very nice...

Yep. Looks about right to me. That's about the same size fire I have smoking sausages and snack sticks... I see you have propane as well, is that just for lighting the wood or do you use it to moderate the temps. too?

Just for lighting the fire. Never tried to manage temps with it.

I use wood for 80% of the heat, propane for the other 20%. Don't know how that would work in a Lang, but it works exceptionally well in my large outhouse smokehouse.
