Just getting started in smoking, I have a Brinkman all-in-one which I use in propane mode, along with the Smoke Pistol. I had some problems keeping the heat down to 225 degrees, so I finaaly used a Polder digital to know where the correct temperature fall on the Brinkman indicator.

I'll be trying some spare ribs very soon using my own spicy rub. God help me now!

I'll be back with the truth and nothin' butt!

I have an All-in-one also. I drilled a bunch of small holes around the top about 1/8" every 4 " and it worked great. I used exclusively charcoal in mine for smoking but used the propane to start the coals. Smoked all winter in the snow and cold on that baby! Great little smoker. Lift you coals up off the bottom with some sort of screen or expanded metal and it'll go like ... well it smoke great!
