BBQ enchiladas

Last night I made barbecue enchiladas and this is how I did it.

First I rub the pork

Then I put it on my smoker with cherry wood

Here's a picture of me pulling the meat

Then I mixed some pulled pork with some canned bake beans

Here's the enchilada sauce it's half barbecue half chicken broth.

Then I rolled the filling up in a tortilla.

Then put them in a pan and covered them with the sauce

Then i cover them with cheese and put them in the oven

Hmmm...BBQ enchiladas sounds like a very tasty twist to an old favorite around here in my neck of the woods.

Ok...One of his first post and already putting ideas in my head. Looks a great use of left over pulled pork. I'm with Sowsage Sowsage I'd put a hurting on myself eating on those.
