hot weather, a 30 pack in the fridge, and a new bottle of tequila, makes for a perfect Saturday to smoke some meat.

Ill be doing 2 slabs of BB ribs, one on the smoker(2-2-1), one(unwrapped) on the new Weber kettle grill I bought last night. I will also do armadillo eggs so I can use up the olives I have left from last week, as well as some baked beans done in the smoker.

pretty basic, low key weekend. I will take pics, but my darn Flickr account is at its monthly limit(ate really good this month) so I will past them May 1.
 
The SnP went back to the store. Ill try to pull out my Brinkman Electric. Im in the chicken mood this week.
Anyone have a really good brine for chicken. Can not include pineapple as my wife is allergic. Ill add my smoke to the thread hopefully tomorrow.

This is a great thread. Its raining here and its forcast to rain through the weekend. So..I'll be checking in to view the great Qviews.
 
cripes, kris - i see that my typing skills are the typical mish-mash again today, sorry for butchering your name!

as for a chicken brine/method, you might give this a try. results were excellent and i wouldn't hesitate to use it again.

1-1/2 gallons of water
1/4 cup low-sodium soy sauce
1/2 cup kosher salt
1/2 cup dark brown sugar
2 tsp garlic powder
2 tsp onion powder
2 tsp creole or cajun seasoning

i brined the chickens for four hours and then smoked them on my vertical brinkmann smoker for about 5 hours, keeping the temperatures between 225 and 240 degrees. i used half a can of beer for each chicken and added 2 tbsp of soy sauce to the beer. the smoking wood was a blend of equal parts of cherry maple and apple.

i also used a basting mop once an hour consisting of the following ingredients:

1 cup melted butter or margarine
2 tsp white pepper
1/4 cup lemon juice
2 tsp paprika
1 tsp celery seed
2 tsp onion powder
2 tsp garlic powder
1 tsp sugar

results were pretty dang good if i do say so myself, and the flavors complimented well with none overpowering another. even though one chicken was skinned (long story), both were moist and juicy.

we're looking at some not-so-great weather up ehre in north-central montana this coming weekend, so i am not sure if any Q will happen at our place. i've got some spares and charcoal, just in case!

I have not decided what I will do this weekend. Probably just some chicken and some abt's. Does not look like I will have time to do much anyhow. I can't believe you 2 are getting snow? We're at 75 degrees. I have my shorts on for the first time all year. Yeah, my legs make Casper the ghost look like he spent a week on the beach. Oh yeah, thats sexy right there LOL. If I do smoke anything I will for sure post pics of it. Otherwise, eveyone have a great weekend.....Spring is here BABY!!!!!!!!

Those chickens look great. I have a lot of breasts with rib in so im going to give those a shot. Its been a few months since i used the Brinkman electric. I hope it remembers how to smoke.

Winn Dixie has picnic roasts on sale for .99/lb right now, so I'm going to be doing a couple of those. I'm not sure on the sides I'll do yet.

weekend weather outlook Tampa area: 86-87 degrees and mostly sunny
 
I'm going to be start the build on my towable unit on Saturday. On Sunday I will be smoking at least a butt, some mac and cheese for a friend that just got out of the hospital.
 
Weather is supposed to be in the mid sixties and sunny this weekend here in southern Oregon. I have got one rack of BB's left from a three pack from Costco so those are going on along with a nice fat Tri Tip and I'll probably do some twice baked taters. Going to make my rasberry chipolte BBQ tonight and will smoke everything Saturday pm. Of course a couple of Pendleton Whiskey's and coke are also on the menu while everything cooks. I post up finished pics on Sunday.

Supposed to be 82 friday, saturday, & sunday. Got a case of johnsonvilles in the freezer that i think i'll break out & smoke . (The ones that chisoxjim did looked awesome) then portion, vacum pack, & re freeze for quick summer meals. contemplating throwing on some country pork ribs as well ..... but we'll see.
 
Actually i didnt have any problems. I keep reading how people get more time out of charcoal on the UDS and i happened to find a drum. I want to give the drum a shot. I have less space to smoke on, but i think all in all it will be more efficient. I might need to get a second as a back up for parties, but the full amount was refunded from walmart so i cant complain.

Brinkmann still sent me the replacement firebox. Im going to modify it so i can have a small BBQ for my son. I doubt i will use any fire in it as he is only three, but im sure he will have a hoot QUEING with pops.
