First let me start by saying I am a newbie to smoking and with my purchase of a MES 30 I had a few questions to those long time smokers. 1) I have heard many say to use the 3-2-1 method, yet others say to use the 2-2-1 on baby back ribs. Which method do you use and why? 2) What kind of wood do you use? 3) Some say to spray apple juice on them during the first step. Would you do this? If so how often and how much? What about clean up? Seems like it would get pretty sticky. Thanks for all of your kind help!
