Does anyone have tips/tricks for achieving good bark with the MES 30? I seem to always swap moist meat for a lack of bark. Any ideas?

I always get great bark. Are you coating it liberally? Are you wrapping? What kind of run are you using?

Sorry for the late reply. Very liberal in my rub coating. Have been wrapping when pressed for time, starting to plan ahead more and allow it to run unwrapped. Rubs vary, I like sugar and salt bases with POG or a combination of things
