Just went to a local boot sale (sort of flea market for our mates over the pond), and there was a 'mobile butcher' selling his wares.

The UK folks will be familiar with this, a specially constructed refrigerated truck which, when opened down the side, looks like the front of a butchers store, with the butcher advertising his wares over a PA system.

Any way, I got there pretty late and most people were packing up, but I got three packs of pork sausages (8 in a pack), for £1 the lot, 5 thick cut sirloin steaks for £10, but to cap it all I got this lot


three pork leg joints, which when trimmed an skinned weighed just over 10kg, the whole lot for £15.

Needless to say, I'm boiling up a batch of brine to cure these beauties in.

Needless to say, I'll pop back to that market again
 
Sorry I'm late. Beautiful meat at one heck of a price!

Cheers Brian, well its ben 10 days so, as these three joints only average about 3kg each and were all injected with brine as well, I think they may be ready to come out.

What do you lot think?
 
And this is what one of them looks like after 24hrs cold smoked over hickory and oak, 2 hours in the oven, now sliced ready for sarnies and salads etc
