BADSS very nice job on those ribs! Thanks Deb for asking about the car, I was thinking the same thing as soon as I saw the pic. I never knew about the Beaumont and that sure made for an interesting read, learn something new everyday!

Please keep us posted on the progress of the Cuda. Hmmmmm a Cuda with a HEMI? That's gonna be insane!!! I'm now officially jealous.

Thanks all for the comments on the ribs and our rides! One thing I am not sure about and I've read about the lower damper for inlet air however in looking over my smoker I don't have a lower damper. My smoker is the Smokey Mountian series and the day I smoked we had like 30 mph gusting winds. In fact I took a couple of those foldup tables opened them up and layed them down around the smoker to kind of shelter the smoker as it was that windy! I am wondering now without the wind if I too may experience some of the issues others are having with evil tasting ribs due to not having enough air and too much smoke? I knew of course we were making smoke however it was so windy there was no way in the world you could judge how much was comming out of the upper damper and due to the wind I had it almost closed as the wind howling accross the top of the smoker was pulling the smoke out. Would you suggest that I put a damper in or does anyone else with this smoker have any issues with this problem? I may be jumping to conclusions here, but I kind of have a tendancy to try and figure things out before they become an issue. I try being proactive rather than reactive and that sometimes drives even me nuts!
