Bacon Wrapped Pierogi

So yesterday I was christening my new sNp and had so much open space going to waste I tried to fill every inch of it.
Smoked some beef ribs, boneless pork ribs, turkey legs, ABT's, an Ellios pizza and something I wasn't sure how good it would be but turned out to be pretty darn good!

SO I took 4 cheddar and onion pierogies and thawed them out.
One I sliced an onion and surrounded it with onion slices, the others I cut a thick slice of cheddar cheese and placed on top and then wrapped them all in bacon.
I also had a bit of an onion and one extra piece of bacon so I hollowed out the piece of onion, filled the caivty with chipotle BBQ and wrapped in bacon.



Threw them on towards the end of the smoke near the firebox. Smoking with hickory around 225-240, not sure what it was at at that point.



Pulled them when the bacon looked done and had some Tabasco mustard to dip them in but I ended up not using it. Though good the mustard took away from the nice smoke/bacon/overall flavor. The ones topped with cheese lost a lot of it during the smoke so maybe inserting the cheese into the thawed pierogi would work better.





They were really good and I will definitely make them again.
Next time I might cook a few and let them cool them wrap and smoke and see how they turn out.
I love experimenting with new things, sometimes experiments don't go so well but every once in a while it works to near perfection.

If you like pierogis then this is definitely worth a try.

I have a few more from last nights smoke that I have to post but I wanted to do this one first considering how impressed I was with the flavor of the finished product.
 
Wow!! I was brought up on those. They look great, one more thing to add to the smoke list. Probably be good in the middle of a meatball wrapped with bacon.
