I chuckled out loud with glee after reading Jeff's newsletter highlighting this dish.....just can't wait to do this! My questions are these: Did the bacon weave come out crisp? (Can't really tell by the photo.) Why, in the newsletter, does Jeff indicate he never recommends soaking chips for an electric smoker, even if the manufacturer does? And finally, I'm just doing a 1/4 loin (under 3#), but of course it is the same amount of meat thickness as a 1/2 loin, so I don't think my loin will cook at any significantly faster rate than the 1/2 loins in Jeff's piece........do you out there with more experience than I agree with this?
Not even sure what the "Test Area" is yet, so don't know what to expect with any feedback (or no feedback). Guess that's what a "test" is......we'll see how this goes!
