I have a boneless Boston Butt curing for 10 days. Usually I smoke it and make bacon. I was thinking that I could grind it and make bacon sausage.

Cabelas advertises a seasoning blend for ground venison bacon, turns out it is just these two things in the cabelas box. It is slightly cheaper to buy it from PS Seasonings directly.
The two combined had a great maple/bacon flavor. I smoked it with apple wood I think. If I were making sausage, I think I'd go with more pork than venison!?
