I cured my pork belly for 14 days and getting ready to rinse and refrigerate for 24 hours, can I vacuum seal it and put in the freezer to smoke at a later time?

Appreciate it sir!If you're gonna freeze it , save the drying step for after you thaw it to smoke later . Rinse, towel dry , then vac and freeze .
Thanks a lot sir!Yes - definitely. I typically cut up the belly into manageable pieces, then pull to season/smoke when I need to replenish my supply! It also makes life easier since I like to play with seasonings on my pieces, but the rest of the family likes the standard honey/sweet rub I use.
