Bacon candy!!!! I replaced the faulty control board in my pellet grill this evening and decided to do a trial run to make certain it was functioning properly to prevent getting an expensive surprise on the next brisket!
Rather than let all that good smoke go to waste, I basted some thick cut bacon with syrup and brown sugar, then sprinkled on a light coat of my dry rub for pork. I cooked it about an hour, then turned them over and sprinkled rub on the top side and cooked another hour. I was out of Maple syrup which I am sure would be better, but it was still mighty tasty and will be made again!

The grill/ smoker did ok on the trial run, so am ready to toss a brisket in it next time
 
Its been a while for me but that is some good stuff for sure.

Like

I love Pig Candy, but it is so time consuming that I only make for special requests and/or holidays.
Try it with just a sprinkle of cayenne pepper, or even with chocolate and nuts.

Looks great, point! What temp did you us?

Chile, I think you already got a like out of me for that chocolate covered big candy. But dang if you didn't get another like from me LOL.

Thanks! started it at 225° and the last 30 minutes I bumped it to 300° to crisp it a wee bit. This was really thick bacon
