Picked up 2 racks of babyback ribs at the Commissary on the way home.

These will be my first project in my new smoker.

I have only ever done ribs by the 3-2-1 method in my smoke hollow propane smoker.

Anyone want to share a recipe for ribs in the MES?

3-2-1, or some other technique?

Hope to smoke them on Saturday.

You know I used to be a fan of the 3-2-1. But now I just put a dry rub on and put it in the smoker, and just let it do its thing. I typically keep the temp around 250 and check back in 3 hours.

Here's what I look for
1.meat pulled back from the bone a bit
2. If there some pull back I pick up the rib halfway and do the bend test.
3. If it cracks then I'm good. If not I leave a tad bit longer.

I've started to fine interest in YouTube and documenting my smoking process. I'm sure you can find a ton of videos. However stay tuned as I'll be making a how to with ribs.
