I have cooked numerous spare ribs on my GOSM but never tried babybacks. I am prepping them this morning and cannot seem to find the membrane to pull back. Everytime I seem to think I have the membrane I pull on it and it tears like a price tag and doesn't seem to come off as one like my experience with spare ribs. Any chance the membrane is already off from the butcher? Is the membrane smaller or different than in spare ribs?? It just doesn't seem to come straight off for some reason.

That is very possible. If the membrane was there you would know it.

Yes, it is entirely possible that the membrane was already removed when you got your ribs. If you can't pull it off like you do with spares, it isn't there.

Thanks for the quick responses, I appreciate it!

I did 4 racks of BB's yesterday, and 3 had the membrane, 1 didn't.

Raven, I had the same issue on Friday night and high-jacked someone else's thread to get a quick assurance (from Capt Dan) that this could be the case with baby-backs. I had purchased mine at CostCo and had only done spares before Sat.

One video I watched (barbequeweb.net I think? -- see google) trying to figure this out mentioned something about a secondary membrane that is below the top.

PS -- I did 6 racks of BB's (2 packages) none had a membrane.
