Baby It's Cold Out - Smoked Chicken/Wild Rice/ Mushroom Soup W/Qview

Damn it's cold here already, brr, 40'. I made this a few times last year but it got lost in the crash.

I decided to take the carcus from the Sam's chicken and strip the meat and toss the bones, skin, ETC in a pot.




I got about 1 1/2 cups of meat off the bird and found 1 baggie in the freezer. It will be a small batch, but it will still hit the spot tonight for a late night snack.



2 cans mushrooms, 1/2 onion and about 2/3 cup wild rice. I also found about 1 1/2 cup of some smoked beef aujus in the freezer and added that to kick it up a notch.



I'll simmer for maybe 1 hour to get the flavor, strain, and add the rice and other stuff.

I hope it's as good as it was the last time I made it.

comfort food indeed ron-sounds good,and yes cold here also-temp was 30 less than yesterday and looking at a freeze tonite-back to the 80's sunday though.
 
Great throw together smoke Ron, love making a broth/stock from a smoked bird.
It's 40 degrees in NM? Wow, and here I am sitting in Jersey at a sweltering 53 degrees

It is actually saying it is 28' right now on AOL. BRR. Soup will be good later, I'll need to put my hands around the bowl to warm up, lol.
 
I just had 2 bowls I will post some pics tomorow, it is great. The camera is charging.
