She got her present early, a 'Wacom Cintiq Pro 16" drawing tablet, but she had to wait till this weekend for her Birthday Dinner because I work 12pm to 930pm or later.
As family tradition goes she got to choose the menu.

Asparagus with Parmesan Sauce
Frozen Peanut Butter Pie with Crushed Oreos
Chicken Cordon Bleu
Pound breasts out to 1/4 inch flat, salt and pepper, then layer cheese and ham, roll and toothpick securely.
Then they get dipped in beaten egg and rolled in seasoned breadcrumbs.
Let the crumb crust set up in the fridge for 30 minutes.
Spray with olive oil before going into a 400° oven, shoot for an IT of 160°, and then broil if needed to get a nice color.
Twice Baked Baked Potatoes
These had three sticks of butter, sour cream, heavy cream and approx 1/2 LB each of Gouda, Smoked Gruyere and Parmesan.
A generous addition of salt to make the flavors 'POP!', and some ground white pepper.
Twice baked till hot and then topped with more shredded Parmesan and broiled for color.
Asparagus and Parmesan Cream Sauce
Spray asparagus with olive oil, salt, and then broil until just hot.
Sauce
4T each butter and flour for a blonde roux
3c heavy cream and 3c shredded Parmesan
Salt to make them flavors 'POP!'
Frozen Peanut Butter Pie with Crushed Oreos
Recipe makes one pie
1 16oz tub Cool Whip
1c powdered sugar
1 8oz cream cheese
1c creamy peanut butter
1T Kahluha
1.5c crushed Oreos -or- 1c mini chocolate chips
1 prepared pie crust, Graham Cracker or Oreo
Mix peanut butter, powdered sugar and cream cheese
Then mix in Cool Whip, and finally fold in crushed Oreos
Mound in pie crust and then freeze.
