Baby brisket catching some smoke today

Just put on a 3.5# brisket. First time with one this small so Wish me luck. Basic rub left on over night. Got a late start (messed up and took my wife with me to Walmart) so going to crank her up to 250+. Plan on throwing some Mac and cheese on later. Hoping it’s ready by dinner time. Will keep y’all updated.

I usually go small as there is only two of us most of the time.

That really is a great looking cut for a 3.5lber.
 
At 160IT. Put in the Mac and cheese. Hit the brisket with a lil spritz.

Same here. When I saw it had to get it. The store said it’s just a special and probably won’t get them anymore.
 
Just pulled off with IT 202 and nice probe. Through some sliced bacon on. Threw some bread crumbs and the bacon on top of the Mac and cheeses. Thinking I may have put the Mac on to early hopefully it’s not too dry.

Timing was really good. Tasted good. Still have lots to learn. I’m just going to keep practicing.
