Just brought my smoker back from the dead and decided to give some ribs and chickens a shot. Of course the rain decided to come down and i've been looking forward to this all week. Not to worry. I moved the smoker under the patio and cranked it up.

Simple brine for the chickens overnight

Thanks for all the replies. After further review everything was a bit too spicy. On the chicken and ribs I need to cut back on the amount of rub I use. The chicken brine recipe called for cayenne and black pepper, so I will look for a different brine next time. The ribs could have use a bit more time in the foil I think. They were good, but I would have liked a bit more tenderness. I think I would prefer to finish them with a sweeter sauce next time. I had the classic rubber chicken skin problem also. It would be difficult to crank the heat up over 300 when doing chicken and ribs together, so I think I'll try to finish the chicken on the grill to make the skin crispy next time.

All in all not a bad cook. Looking forward to trying again!
