Question for the veterans, I’m brand new to smoking. I have a OJ Bronco drum smoker, I did a long 10 hour chuck roast using Kingsford blue and white bag and held 250 the entire cook. Neatly stacked coals around perimeter working to center. Lighting a couple from one side so it could work across during cook.had great success. Tried repeating method using B&B competition oak&hickory. Could not seem to keep temps under 280-295. And that is even with intake completely closed and also pinching stack to 50%. Ambient temp very similar. Is the B&B just too hot? With Kingsford intake at 1/2 stak open 100%. Thanks for feedback

B&B is my go to charcoal of choice, the orange bag specifically. I've not tried smoking on my kettle using anything else so, I don't have that reference point. The briquette burns longer partly because it is much larger than Kingsford etc. Hotter? No experience comparing to two. If you try the snake method, perhaps you could do a single line instead of a double line? Just spitballing.
 
B&B is also my charcoal of choice. Use less coal or start fewer at the beginning are two options. You'll get it figured out.
