are some meats just not injectable?

Hey Y'all
DEERMAKER DEERMAKER and chopsaw chopsaw got my pea-sized brain going with the deli roast beef post earlier.
went out and got an eye round and some Zatarain's creole injectable since tony's isn't available locally (today)
I didn't use the injector that came with the sauce, as I have an industrial sized manual injector.
sucked full, inserted and tried to inject. it was like trying to push a thumb tack into a cinder block, took it out and tested in sink for flow out of the ports and it squirted well. so I guess I just wanted to know if very lean meat
eye round) is too tight to accept an injection? I want to "cook" this afternoon so i can chill overnight to slice for deli sammies this weekend. plan on cooking it to 130 IT as we like sliced RB NY deli style. TIA John

Try " withdrawing " the needle as you inject . I get that sometimes . I usually just move to another spot . I've never used that brand . I compared the sodium amount per serving to the Tony's . It's about the same . Just be aware of adding additional salt on the surface .

Plan sounds good . Inject and hold as long as you can before cooking .

After injecting put it in a suck bag for overnight in the refrigerator. Thx

Agree on both answers above. I did the eye roast in my post, the needle will get it in there. Just keep loading it up. It will take what it can and thats all you need. Let is soak for as long as u can. I took mine to 140. It was perfect. Chill overnight. Then slice. Enjoy!

A jacarrde (sp) ran over it and then bagged overnight with the liquid, have made several messes over the years, some saran wrap over it before injecting helps keep the mess down :emoji_laughing:
