Apple Sausage Recipe Help

Hello All,

Last fall the family and I went to an orchard here and they had some really good apple sausages. So good I bought a couple of packs from their freezer case to take home with me. Good thing I did since the orchard changed owners and their new "apple brats" are boring store bought brats dipped in cider or apple juice. A friend from work went there this year and was a little confused when he tried their new brats after I raved about them. I took a picture of the label for future reference. I'd love to try and recreate the sausages at home. They were cured and smoked. Here is the label with ingredients.

The company that made the sausages for them is still in business but from looking at their web site this must have been a special order since they don't have this kind of sausage on there.

Anyone have thoughts or a recipe that might be good to try for replicating this at home?

Write Odenthal and let them know how much you liked it.. Tell them you would like more OR, what can I do to replicate your recipe..
I did that with an old sausage mix I had... Called the manufacturer... They sent me free samples of that mix and free samples of 10 other mixes...
 
Hey Drew ,,, couple shops around here make a version of apple sausage , but they are not smoked .
Len Poli has some formula's on his site . You might have a look there .

I see Dave just gave you a good idea . Never hurts to ask .
 
I would certainly call them . I looked at a news paper add from up there , it says seasonings for the do it your selfer .

Looks like a simple sausage recipe with apple juice instead of water in the mix??? If you didn't want much liquid you could boil down the juice (or cider) into a syrup first.

Drew if Bear idea does not work well here is one that I made up. These were raw sausages so no cure, but if yor going to smoke then cure should be added.

1 kilo ground pork

Apple granny smith (25%) 250 grams

Cheese high temp cheddar (10%) 100 grams

Salt (1.8%) 18 grams

Sugar (.8%) 8 grams white sugar

Nutmeg (.25%) 2.5 grams

Cinnamon (.15%) 1.5 grams

Water (7%) 70 grams or apple juice



Percentage times the weight of meat in grams.

Liquid is minimum and more may be added.

I just want to chime in if you make your own account for the apple adding in extra moisture. I did a cranberry jasmine rice summer sausage and before I stuffed and smoked, it was fine, post smoking..things got weird.
