It all sounds good... My pork shots (called pork candy) consist of.... The same meat (sliced kielbasi wrapped in bacon) but I use a mixture of 2 parts brown sugar, 1 part your fav. rub.... Hence the name "Pork Candy" ... the brown sugar melts and becomes a little crunchy.... they go fast as well....
JcK, I have made them almost the same way as you. I leave the bacon raised a little over the top of the sausage, then at a jalapeno, then the brown sugar. They sure are good.
