Im sure Im not the only one that is making plans for the 4th... What is everyone cooking??? I will be cooking a whole hog on my new Lang as long asnothing goes wrong with the construction.
Hey, Matt! If you have to, just do a shorter smoke...ABTs, steaks, chops, fattys, leg-o-bird, breast, wings, etc....lotsa stuff can be smoked-up in short order. Or, do your goodies in advance, and freeze or fridge 'em...just reheat and enjoy!
I'm sure we'll do another blow-out here...always do! I haven't had any time to think about it yet, but, I'll come up with something for a good smoke, I'm sure. So, many smokes, so little time!!!!!!! LOL!!!!!!!!!!!
Not sure yet. I know the weekend before we are camping with a large group of friends. The towable will be done by then and making the trip. Maybe we will do a rib fest or something.
I'll be heading to the Outter Banks(NC) to my sisters beach house and will be smoking fresh fish and ribs(baby backs) with some of that Texas pepper jelly basting on the ribs, hope to have pictures this time. I'll be doing alot of surf fishing before the fourth.
Working out the logistics to have my kids here for the 4th....they visit every summer. I know he loves beef, she loves bird, so may turn out to be a grilling combo kind of day.
I'm trying to entice them into a 14 hour full-packer brisket smoke. Both of them would be so excited to have to get up at 0300 and "start a fire"! They both know that means "fatties", which they can't eat enough of, and love to make. We'll see and definitely keep you all posted!
My neighborhood has a big celebration. It used to be a competition and one neighbor against the other, complete with travelling trophy. We have since combined forces and have a massive blowout party. Last year I smoked right at 200 lbs of ribs, brisket, pulled pork, chicken, and sausage. Then everyone potluck's the sides. Then we have an amazing fireworks display that go (and I'm not hardly joking here) for several hours. We will do this again this year, and I guarantee it will be a blast!

We were Hero's with all of the smoked meat. Me and a buddy did 200 lbs of stuff, and it was truly amazing.

Here is one battery that was set up. There are more around the pond, and then a separate trailer as well. I'm not kidding, it is better than most small towns, and lasts for hours.
Wow BBQE! Round here that many fireworks would land ya in the clink! Ain't sayin we don't blow sumtin up from time ta time, it just can't last to long er leave much evidence is all!
Memorial Day: My neighbor asked if I'd help cook for a party he's having and I told him sure so I'll be doing 7 racks of ribs he's bought along with dogs and burgers for the kids.
4th: My neighbors Dad is thowing a party with fireworks and all kind of stuff and asked if I'd be willing to do some chicken halves on the grill for around 40 or so people. Free food all I can eat and beer too so I said sure. He bought a case of 48 halves and expects about 40. So me and his son will do those while the women do all the sides. Sounds like two good fun days to me. All I have to do is cook as they are buying everything. Doing the chicken Cornell style, everyone around here loves halves like that. I may have to convince him to let me smoke up some finger foods just for the fun of it. He loves that kind of stuff. LOL
