Well, I wanted to try my new toy on some thighs that I had in the freezer.



Just salt, lemon pepper, and garlic.



I started both ends since the chix will take a shorter smoke time than the last test on the pastrami.


After 10 minutes she is loaded and smokin'.

I just turned off the smoker for awhile as my temps were at 175'. I left the generator going and when the internal temps got to 140' I just set the smoker at 275' for the finish.



Still plugging along.

I got about 5 hours burning it at both ends.
Works great.

I have seen serveral references to this smoker where can someone get one?
 
Alright, I can tell the giddiness but have a few questions. What wood did you use and did it come with the smoker or did you use a big hammer?

TJohnson is the fellow member who is putting them together - I am taking mine this weekend and try smoking with a small BBQ from the motorhome - these are great.

I did a bunch of cheese last weekend with mine and these thighs look great Ron. What temp did you start with the smoker?
 
I started it with no heat for 1 hour then 275'. They came out in less than 3 hours.
