Got another order for 4 smalls. Got 4 more after this batch
This mix will make 2.
250g filtered water
25g plain olive oil
125g active starter. (check your starter by dropping a tad in some water, if it floats your good)
(salt i will add after a 2 hour autolyse) 11g
Active yukon starter.
Mix the starter, olive oil to the water.
Now add the flour 9im using bread flour. Rough and shaggy, cover and autolyse for no less than 30 mins or up to 4 hours.
After autolyse add the salt and pinch good. Make a rough ball, cover. Stretch and fold after 1 hour of the bulk rise.
