I was planning to make smoked chicken wings but my local supermarket had sale on this giant drumsticks for 79c per pound so… Cooking lollipop chicken drumsticks was on my list “to do” for some time already so I changed my mind and switched from wings to drumsticks. Cooked yesterday and brought them to work today for my team’s potluck.
Used chef jimmy’s Families Favorite Brine and brined drumsticks for 36 hours. Before placing a rack with drumsticks in the smoker, I brushed them with a mix of teriyaki souse, freshly minced garlic and ginger, a little of vinegar and good portion of hot paper flakes. Cooked at 250F for about 2 -2 1/2 hours using mix of cherry/oak pellets. Will keep you posted on if my guys’ and galls liked them….It was completely dark outside so I am sorry for not having more pictures - only one pick of cooked product….
