Well y’all, it’s currently 1:04 am and I’m putting an 8 pound pork shoulder on. For no other reason than I’ve had 8 or 9 beers and a shot of whiskey or two, so why not???

Beer.......whiskey......1am.........I feel a "Help! Is my meat safe" post coming on lol

Boy, if I had 8-9 beers plus a couple shots, I might be yelling "Help", but I sure wouldn't be able to put anything on the smoker.
 
Came out looking pretty good! 13 hours later, pulled at 197 degrees. Gonna let it rest for a while then see how she turned out.

On a side note, I took the Bloody Mary advice. Gotta pace myself though, the wife says we’ve got plans tonight lol

Looks like two different pieces of meat from where I sit.
I noticed that as well. There's another slight discrepancy but I won't mention it. Hopefully he had a nice dinner...but still waiting for pulled and plated shots.

Sorry for the late pulled pic, my phone grew legs and walked away this weekend… picked up a new one today. Luckily it was backed up and saved all my info.

And for those saying it looks like a different piece of meat, I agree! Maybe it was the lighting and the angle, who knows. Definitely was the same one though.

It turned out really good. I usually smoke pork with apple or alder but being that this was a last minute decision I used mesquite, it’s all I had on hand. Gave it a really good bark, almost tasted like beef jerky…
