I just dug this one up out of my archives and did it for a quick gathering. What I like is prep time is fast, 4 to 5 ingredients, and cheap. You can make 15 for
a large group and not spend $15 !
- Cap and de-seed Jalapeños
- Fill them with cream cheese
- trim and lightly pound out your thighs. evens them out for uniform cooking and rolling.
- Wrap thighs around Pepper
- Wrap bacon around thigh, hold with tooth picks.
I smoked around 250 for 1 1/2 hours. The beauty about these is once done, you can wrap the group in foil and hold for extended periods at 150 or so. The thighs really don't dry out like a breast would.
