So I dragged myself out of bed at 3:30 am on Black Friday and picked up one of the MES 30 ss /w window from Bass Pro Shop for $179 (heck of a Deal I thought). I wanted to get some advice from others who have a similar smoker.

1). Seems like the A-Maze-n products are highly recommended. I saw that the pellet versions are best for use in both cold and hot smoking (I like a lot of smoke flavor and also if I have my wife do it while I'm at work, I want her to be able to set and forget). I'm trying to figure out if the tube or maze would be best to use for the MES 30.

2) What size of the above recommendations?

3). Are the A-Maze-n pellets chemical free? I always used chips or wood logs with my old firebox smoker for this reason. Pellets I've seen in the past have some waxy substance on them. Not sure what it was or if the A-Maze-n pellets have it. Thoughts on this would be appreciated.

4). How is the digital temperature probe built into the MES I got?

5) Any coupon codes?

The AMNS 6x6 and 6x8 burns sawdust only, and works best for cold smoking and up to 180° or so in your smoker

The AMNPS 5x8 burns sawdust or pellets, and with pellets, is good all the way up to 275°

My pellets are 100% Flavor Wood, and contain no binders or fillers

Some pellets are 70 - 80% filler wood, and only 20% - 30% flavor wood.  In other words, when you buy "Hickory" fro me, it's "100% Hickory", nothing else.  Same with Apple, Peach, Cherry, etc.....

Some pellet manufacturers us oil as an additive, and also to lubricate the dies during processing.  This may be what you're seeing on some pellets.  When pellets are produced, the natural "Lignin" is extracted from the wood, and this is what binds the pellets.

The waxy coating you've seen is the Lignin

The probe in your MES 30 is directly connected to the controller

I should also clarify... My question on the probe was about performance. Does it work well? Is the temp gauge in the smoker accurate or do I need to invest in a better temperature gauge such as a Maverick?

Invest in the Maverick 732. My MES 40 is off as are most of them. Todd sells them too.

I had emailed you a while back asking about some things.  Never heard back but figured out most of the questions with some more research.  

I think today or tomorrow my pops is gunna order me the AMNPS, a Maverick ET-732, and maybe 5lbs of the pitmasters choice pellets.  5lbs of pitmasters plus the 2lbs of oak you throw in with an AMNPS purchase should hold me over for a few smokes. 
 
Well, I seasoned my MES 30 today, then took it out for a ride. Cooked a small corned beef and potatoes. Was very impressed with how simple it was. Now just néed to get an AMNPS unit to give me more smoke and also to set and forget.
