Small town Nebraska. In the process of building a cold smokehouse based off one I saw on this site. I will probably post a whole mess of pictures once it's complete. (Might take me a little while). Planning on smoking with a lot of mulberry wood. Eager to learn more.

Also I have a buddy who owns a butcher/curing shop so I call myself an amateur compared to him. He'll be the one leading the charge in butchering and curing but I want to learn with him. I'm a pretty good carpenter though, so I figured I'd build a good smokehouse. I'm a carpenter with the Nebraska Army National Guard.

Boy, that's going to be quite a nice smokehouse when you get it done!
