My name is Anthony, I am from Idaho and I am happy to be on this great bbq forum/site. For a few weeks prior to my smoking experience i had been looking at everything on this site and many others to get the best tips from the bbq world. I am new to smoking meats but i am not new to cooking. Being Hawaiian we do kalua pig which is cooked under ground for 8-9 hrs. nothing beats it but this comes close. I like smoking meats because you get the natural hard wood smoke flavor. Plus you dont have to dig a whole, make a fire pit for an hour or so, and you dont have to call the fire dept before cooking a pig. I also started smoking my own meats because here in Idaho there are less than 3 good bbq joints in town. Iv done a couple pork butts and chicken and everything has come out great! Wish me luck!!!!
