Decided to try my hand at spatchcock chicken for dinner tonight. Everything went well until about 130° IT. I had just come back in from stirring the coal bed. About 10 minutes later I checked my wireless thermometer. Grate level temp reading 500°! Took a peek outside and smoke is pouring out of of my cooker. Definitely a problem! Opened up the cook chamber and flames erupted. Grease fire! I have my smoker slightly shimmed to get grease to run to the drain which is opposite the firebox. We had some high winds recently and it looks like it was just enough to push my smoker off the shims, causing old grease to run into the firebox. From there it was a chain reaction and the residual grease in the cook chamber caught fire too. I yanked the bird off with some tongs and closed intake and exhaust to cut off all oxygen. Put the bird in the oven to finish.
I thought for sure dinner was going to be inedible. It's not much to look at but it actually tasted pretty good. I prepared Alabama white sauce to go with it which was absolutely fantastic. My wife made orzo pasta and steamed veggies to go with. A good tasting meal that was close to being disaster.!
If you've never tried the Alabama White Sauce, I got the recipe from Malcolm Reed. It is as follows:
2 cups mayo
1/2 cup cider vinegar
1 Tbsp coarse black pepper
1 Tbsp granulated garlic
1 Tbsp sugar
1 heaping tsp. minced horseradish (my wife dislikes horseradish so I omitted it)
1 tsp salt
1/2 tsp cayenne
Juice of 2 lemons
Whisk all together and serve over chicken. Delicious!
