Wife wanted a simple fish dinner but then said how about tuna? Ok, thawed some steaks, pulled together some spices for a rub and mixed up a dipping sauce. Dredged both sides of the tuna with the rub. Fried each steak for 15-20 seconds per side in a very hot CI skillet with a little oil. This yielded a very nice rare steak which Cyd loves. Next place the sliced tuna on a bed of spring mix with diced very sharp cheddar cheese, genoa salami and olives plus a dressing of choice. Hers was Balsamic, mine was Tuscan Italian. Add some wine for a very flavorful yet light dinner.

Soy-Mustard Sauce
2 tbs Colman's mustard powder
1 tbs hot water
--- mix the above and let sit a few minutes before stirring in the rest, then chill in fridge until serving time.
1 tbs unseasoned rice vinegar
2 tbs soy sauce
Blackening Spice Rub
1 1/2 tablespoons paprika
1/2 tablespoon cayenne powder
1/2 tablespoon pure red chile powder
1/4 teaspoon freshly ground white pepper
