Decided to smoke 3 small Boston butts, smoked potatoes, 1st-time ABTs, and 1st-time "Wicked" baked beans for daughter's 14th Bday party.

Boston Butts

Just for the experiment, I bought 2 with bone-in ($1.99/lb) and one boneless ($2.20 per pound).  There was no difference in taste so I will stick with bone-in butts for now on.  Smoked for 10 hours ranging from 220 - 275 (stick burner).  Cooked until 190 IT since family was hungry.  They were juicy, tender and had great bark.  We were just going to slice them, but they just fell apart mainly.

ABTs

Had to try them with a simple recipe:  onion and chive cream cheese, cheddar cheese and ground sausage for filler and then wrapped with bacon.  I regularly use peppers in various dishes, but today I made a huge mistake in wiping my left eye before washing my hands.

  Instant blindness and pain in left eye.  I screamed for my wife to "get the Visine" and, with both eyes closed, felt my way out of the kitchen and into the family room.  Opening my eyes was torture.  My wife pried them open and squirted drops in my eyes.  That didn't help.  A cold washcloth with a piece of ice in the middle seemed to help.  After about 5 minutes, I attempted to open my eyes again and it wasn't as bad.  I could have worn gloves, but I think safety goggles would be better.  Thoughts?

Wicked Baked beans

They were a hit and will be a regular at our home for now on.  Sweet, flavorful and savory with bits of bacon, sauteed onions and green pepper.






My guests started eating the AMTs as soon as I pulled them so no pictures except for the few left-overs (that were cold).

I will do better with pics of other items, but was so busy cleaning and getting the yard ready, that the ABTs was all I had time for.  I will learn to do better.
 
Those ABT's look great, James!  I always use latex gloves to handle peppers, for the reason you stated:  I once got it in my eye.  I guess we all learn that lesson the hard way.

How many pounds each were the butts?

I ask because I don't think I smoke mine for 10 hours (I think my last one was 7, need to check my notes).   The last couple were delicious but I'm always looking to improve :)

I do stick with the 230-245F temp as much as I can with my ECB  (although with the new cooker this year, I'm hoping to have better temp control).

They were about 5.5 pounds each.  Having a brick smoker and using firewood to smoke, my temperatures vary from 200-275.  I only check my wood every 30 minutes or so.  If it is near 225, I'll give it another 10 minutes before putting another log or two on.  After that, the temps will climb back to 275 or so for a few minutes before slowly dropping down to 240 or so.  If I ever get temps above 300 after placing a few logs on, I'll pull one off of the main coals and let the temp drop.
