Adding raw honey to snack sticks. Ever tried it??

I’d like to try it but not sure if it would just run out and be a waste. I’m guessing it would still sweeten the meat some. Ground 38 pounds of brisket and few pounds of pork belly and will be stuffing soon, I’m going to run shredded cheese this time , tired of cutting it up,

Not a big fan of honey and cured meats. Played with it some and much prefer brown sugar flavor wise. As far as the cheese, I most only use Tillamook sharp cheddar thick farm style shreads. Just weigh and apply easy peasy no fuss.
 
Ya I might have to spend a little extra and get the tilamook since it’s pretty thick shards.

Whats the deal with honey and pink salt #1?

Well maybe I should have put that honey In to hold it together better. I kinda put too much water in. Was pretty wet when stuff and coming out of the end of the casing easily. About 14 cups to 50 pounds of pepperoni. Hopefully it will be ok and not all fall out of the casing while smoking. I just add water by feel and usually put in like 4 bowls of water from a standard size bowl to 45 pounds of pepperoni but used a much bigger bowl this time lol. I checked with a measuring cup to the amount of filled the bowl with water. Will see what happens tomorrow, was about 50 pounds of pepperoni mix before water, weighed 57 after the water
