Ok I have to admit I was trying to cut an hour and a half off my baby backs smoke time.

First, I cooked them in my Weber (indirect heat) at approx 275 for an hour. I then transfered it to my GOSM at 230 for another hour. I then put it in a aluminum pan covered it with foil and put apple juice in the pan. I was then going to keep on cooking it at 230 for another hour and take it out for a half hour for a total cook time of 3.5 hours (guessing). Well everything went well until I put it in the pan with apple juice.

It started to snow so I turned up the heat after opening the door. Well I forgot to turn it back down....I spaced out!!! I waited an hour before checking it again and the smoker was smokin, and not the good kinda smoke. The apple juice was gone and the ribs looked like a lost cause.

I decided to keep it foiled for a half hour and low and behold. Total Bliss!!! My wife ate more then half that night and can not stop telling people how amazing it was.

Lucky I guess.
