Well I decided to see if I could make a sandwich worthy of a kings table. I think I did it. My mother in law bought 2 nice Chuck roast for me to smoke. I smoked them for 6 hours until the hit 196, and let them rest. I made New Orleans style French bread from scratch and toasted it. Covered mine with Gouda cheese and the wife’s with provolone. I used both butcher paper and the foil boat to make sure I caught all the Au jus and then dipped the meat in it before putting it on the sandwich. I made homemade Mayo and turned it into a horseradish sauce like what you get with prime rib, and is was so good it made me want to slap my momma. My mother passed in 2012 so I took the only other option. I took a bite of my sandwich, stood up from the table, walked to the other end of the table, and slapped my wife’s mom. Knocked her sandwich right out of her hand.
