Looks great Red, fun following with the build. That is a heavy son of a gun.

I don't do metal work. But I think I can build one out of some good finish wood and a few coats of marine spar varnish. lol :emoji_laughing: 🤠

Jim is going to love this smoker, and I see he will be able to get quite a few packages of hot dogs in there .

David

Hey lots of guys build smoke houses outta wood - so why not! :emoji_wink: :emoji_laughing:

Thanks for checking in David!

Dang it Red! Now I gotta get off my arse and get this thing paid for. Been dragging my feet cause I know how I am. Once its paid for my anxiousness to get it skyrockets! And I didnt wanna be hounding you. Now its all on me.
I'm feeling like a new dad getting close to delivery day. Its gonna be a beauty!

Jim

LOL no worries Jim...hound away! It's close enough to finished that I'm getting more excited to keep at it. I don't want to commit myself to a finish date, cuz I don't work in the shop every day...but I kinda think I can have it ready for delivery in just a few weeks. It's not unreasonable the think you could be cooking on this pit by Memorial Day!

Oh man! Now the pressure is on! Woohoo! Bring on the OT. And I gotta get busy with wood shopping, and gadget buying!

Jim

Before you weld on the stack check that it can clear a standard height garage door.
Hmm...you got me to thinking now....I may just keep it in the garage if its finished by the end of may. Cause, Lord willing and the stars align I'll be moving to NWA in the early summer. Be easier to move from the garage than fighting it around the house. And I can assert my dominance over the other dads with my massive cooker!
ar! ar! ar! (my cave man grunt)

I did this with the X-Fire at the old house and it DID assert dominance in the neighborhood!!! LOL

Interesting...I've been assuming a shorter stack - about the length of the one you put on the Xfire, would be plenty (I'm going with 4"x4" sq. tubing). The pit builder I talked to says that, since the vertical CC itself is basically a big chimney, a shorter stack will suffice. Now you've got me thinking I might need to experiment with a few burns before I finalize the stack height.

Thanks for the info!

Red
When you are doing the test burns, I would suggest a fire in the VC just to confirm as well. I'm going go out on a limb and say a 15-16 inch ish 4x4 will be the sweet spot both fire box burn and VC burning....

By the way this is asserting dominance.....

So a 15" stack would put total height at about 85 1/2", or 7'1 1/2". My garage door opening is 7' tall, and I'm pretty sure that's the standard size...so either 14" is gonna have to be the max stack height, or I'm gonna have to design a hinge system of some kind. I hope it doesn't come to that - it'd mean ordering more parts...and spending more of Jim's money...:emoji_wink:

Do what works best for the smoker! I'll just work more OT!

Hey Red... We can keep him working overtime for the rest of his career ... :emoji_wink:

Is there a plan for storing racks/grates that have to be taken out for bigger pieces of meat (if needed) ? I'm thinking some kind of hangers on the back side.... Or maybe some slide rails underneath the CC...

Hey Keith... My first thought was just keep it simple and store them on the expanded metal storage rack under the CC, but those are both good ideas - I'd probably lean towards the idea of some hooks or hangers of some kind on the back of the cabinet.

JLeonard JLeonard What do you think Jim? For times when you need to remove racks for larger meats, or for hanging bacon or sausage...would you want a dedicated rack-hanger system of some kind on the back of the smoker...or do you wanna simply store extra racks on the storage rack under the cabinet?

Lets just go simple and store them underneath. Although Keiths idea does sound good.

Just for perspective, the X-Fire is 76.5 without the stack......NOW that gives me a real feel for the size! I am putting a 1-inch vertical collar round the stack area that is slightly bigger than the stack and then adding a welded square nut on the inside of the stack on two sides with matching holes in the stack and collar.... slide in and bolt.....bingo.

It has me intimidated!

Jim
I believe you are going to be amazed at how easy it's going to be to cook on as wells how uniform the heat will be.

Just imagine a bed of coals in the VC, put whatever you want to sear on the bottom rack for a quick hot sear then move them up to the second or third shelf to finish to the perfect temp. If you can cook on a kettle this will be easier.

I am 6-4....So the top rack should be about chin high on me and the bottom rack about waist high. Just right for a fat boy with a twingy back. I'm looking forward to seeing how red does the stack.
