Wrapped some pork tenderloin in bacon. Smoked for a little over an hour at 250. When internal temp hit 140 I upped the temp to 500 to crisp up the bacon. I thought it was ok but the wife and 4 year old loved it. He’s back on his fifth serving. Most nights we’re doing well just to get him to try everything. I was just informed that after finishing off all the meat and his peas it’s dessert time. 😊

oh yes, i would totally eat that up! nice work on my favorite pork products.

Why didnt you love it? Maybe try thinner bacon considering the cook time is shorter on a tenderloin? or torch it when its at temp? dunno
 
Here's an idea for the next time... assuming you thought it was just ok because the bacon didn't get super crispy... try a sort of reverse sear.. take the tenderloin to like 130 and put it under the broiler to crisp up the bacon while taking the pork to 145F.

Doneness is perfect! Congrats on the little guy eating well, especially peas. Is was in my 20's before you could get me to eat peas as a side veg.☺ Yeah I was a Corn only kid...JJ
 
I'd be hard pressed to compete with the 4yo on trips back to the meat, but I'd give it my best. That some good looking stuff!
