My Son and I prepared and smoked a Fattie today for a Couple in our Sunday School Class...


Tightly wrapped w/ a Variety of Cheeses, Colorful Peppers, our Rub, and BBQ Sauce inside! Ready to sit in the refrigerator...


Out of the refrigerator and ready for the Smoker...


Just a little Coarse Black Pepper added...


Smoker Temp: 225*; Recommended Wood: Pecan; Time to roll over...


Just look at that Cheese!


Desired internal Temp of 165* reached. Ready for the oven to crisp the bacon weave...


Out of the oven after only three minutes at 500*. No internal sliced pics since our project was a gift. Pan covered in foil and delivered piping warm to the very special Couple...
