I FORGOT TO TAKE A PIC!!!!!!!!!!!!!!!

To summarize...

The color was good.
Had a decent bark.
It was tender.

HOWEVER...it was BLAND and needed salt BADLY!

I'm pretty sure I didn't use enough oak for smoking AND the basic rub I made/used (got recipe online) could use some tweaking...more brown sugar, perhaps more salt. I intend to do some research on injecting (maybe get some salt/flavor IN the meat rather than only an inch or so deep).

It won't be wasted, though...I layered some in a dish, tossed in some thinly-sliced onion and a drizzle of a mustard-based bbq sauce and baked it a bit...made good sandwiches, just not what I was after.

It'll be better next time.

Sounds like you learned a lot and had fun. Not to shabby I say. And the pork was edible which is more than could be said about my first three attempts at brisket. Now you just have to try again and next time get pics. Scooby will be disappointed otherwise.

RUH ROH!

Allow me this one faux pas...I'm not accustomed to taking pictures of my food! I'm one of those "cook it, plate it, eat it while it's hot" kinda gals. :)

It's all a matter of taste . I don't season mine before it goes on . Good pork flavor and smoke is all it needs for me .
