Wife and I like - scratch that the whole family - likes to hit a dive in Minneapolis calleb the 5-8 Club. Excellent "Juicy Lucy's".
We absolutely love this salad.
They won't give up the recipe, but the brother knows his way around the kitchen so I made up my own version. If it's not 100% it's darn close to what they make.
5-8 Club Tomato and Onion Salad
4 Vine Ripened Tomatoes
1 Sweet Onion
Ranch Dressing
Bleu Cheese Crumbles, Bib Lettuce Garnish
Lightly Cut an X in the bottom of the tomato ONLY cutting the skin.
Blanched Tomatoes ( shocked, Iced, Dried, refrige, skinned, then sliced)
ONLY BLANCH TOMATOES FOR 30 SECONDS !!!!! SHOCK, CHILL, DRY
1 Sweet Onion, Sliced into rounds and layered tween Tomato “pattiesâ€
Topped with a decent drizzle of French Dressing
Crumbles of Bleu Cheese on top
Garnish with baby bib lettuce on the side
FANTASTIC !
Sweet onions are Walla Walla, Vidalia, Maui, Texas Sweet, OSO Sweet, Sweet Imperial
You know, it'd probably be real good with Red Onion as well.
