40 oz Cowboy Ribeye

I've been working my butt off lately and got enough together to buy a Pit Boss 1100 Pro Series today on my birthday. Put it together myself. Really not a fan of putting the legs and base in by myself but everything else was easy.

Filled her with competition pellets, sprayed down with Pam and let her run for 1.5-2 hours at 350.

Then, rubbed down a 40 oz bone in ribeye with salt, pepper and garlic and let it sit out for a while. On the searing section for 2 minutes per side, then about 13 minutes per side at 400 till it hit 125 IT. Seared it some more on the side and edges till it read 133. Pulled it off and let it rest 15 minutes. Hands down the juiciest steak or my life.

My wife grilled up some garlicky green beans and eggplant and made me a bourbon peanut butter pie. Served with eagle rare and a glass of Malbec!

In hindsight I would have seared at 500. Tomorrow I have a 32 oz that I will dry brine, then reverse sear and smoke.
 
That's a huge perfectly cooked chunk of beef...I love it! Nice job!

Oh, when your fixing my plate feel free to slide one of those nutty-buddies along with it. I haven't had a nutty in a long time.

Looks great, next time set as low as it will go till your within 15 of your doneness, remove steak open the slide and turn on high, then 5 min later throw it into the flames. least ways that's what I do for a little more smoke flavor

Looks great! We had that red plate growing up and would get it on our birthday (I have a lot of siblings), never seen anyone else with it! Brings back great memories. Happy Birthday
