Doing a fair size cook tomorrow (Monday). Got 30 pork steaks an 1.25" thick and 12 racks of BB's 2-2.25 lb. For simplicity I'm planning to cook the steaks on the Stumps and the ribs on the Traeger. Gonna fire both up both up at 4 in the morning and serve around 11:30 or twelve. Prepped all the meat tonight which I normally don't do but sure as heck wasn't gettin up and doing it! Also cooked a full steam tray of my baked beans today...think they are always better the second day.

Now thats gonna be one heck of a smoke you have coming up. Good luck we know you can do it and keep us right by your side with the Qview too.

Never had a doubt it was happening . How did those steaks come out ? That is a bunch of food.
 
The steaks turned out fork tender, 2-2-1 will get you there. I had some heat problems about an hour into the cook ended up with a little grease fire. I caught it early and shut off the air long enough to smother it out...you can see a few on the bottom rack got charred pretty good. When I opened the door to see what was going on, it sounded like I was throwing gas on a fire! Instantly shut the door and closed the valve.

We run a grain marketing company and a crop insurance business, we had a customer/prospect meeting today for both, hence the feed. Believe we had a pretty good day.
 
That is truly a thing of beauty. Very nicely done and I bet really enjoyed by the recipients - did you forget our invites?
