I had purchased Jeff's Rib Rub Recipe a while back, but today was the first time I really had a use for it. I FINALLY found a store around here that carries Tiger Sauce, so I wanted to try the Trigg Ribs that I have seen so much of on TV and here in the forums. So why not put them all together?
I assembled the rub last night and applied it to the baby backs for an overnight session in the fridge.
Here we are after 2 hours in the smoker.

Smoker: MES40 with AMZPS
Wood: Pitmaster's Choice
Smoker Temperature: 275
Time: 5 hours (unwrapped for 2 hours, wrapped for 1.5 hours, unwrapped for 1.5 hours)
Rub: Jeff's Rib Rub
Sauce: Jeff's Sauce
Thoughts: Jeff's Rib Rub is pretty darned good, and I can see why a lot of people like it. I also really like smoking the ribs at 275 instead of 225 as well. 2-1.5-1.5 seems to work for my tastes. I still am not completely sold on foiling as it creates that "fall of the bone" meat, as I prefer a little more tug to the meat. Still, the Trigg method has a lot of appeal to me, flavorwise. Right after my first bite, I said to myself, "Okay...I get it." Finally, I was really apprehensive about Jeff's sauce. I prefer a more vinegary sauce (North Carolina style) and when I tried the sauce after making it I wasn't thrilled. Still, I kept it around and when I dipped a bit of rib meat into it and tasted, I found myself really liking it more. By itself the sauce is okay, when paired with his Rib Rub it really starts to sing. It compliments the ribs quite well.
